Becoming an Herbivore

I've been making bowls of salad with just spinach ('cause most other greens have a scary texture), the blue cheese yogurt dressing I mentioned, and a little of the raisin cranberry granola that Jo sent me from Illinois. (I'm out of mushrooms.) And you know, it's good. Really good! I may well become a regular salad eater, if I can get to a grocery store with decent spinach on a regular basis. If that happens, I'll probably be eating the most green vegetables I've ever eaten at any period in my life by a considerable margin.
I want to experiment with other things to put in. Other small uniformly textured things would be good, with maybe a little crunchiness or firmness. I know people use pine nuts; those sound good. I already like chick peas. Maybe if I cook some beans. But stuff I don't have to cook is nice. It's hard to find time. I also kind of wish there was a Sweet Tomatoes around here.
